The Simnel Cake

Simnel cake is a light fruitcake eaten during the pre-Easter period in the United Kingdom. It is distinguished by two layers of marzipan, one in the middle and one on top. The top layer is capped by a circle of  “marzipan balls” made of the same paste, and is lightly browned under a grill.

The Simnel cake is now simply called an Easter cake. Before we all started ordering these for Easter, the cake was mostly associated with Mothering Sunday.

In 17th Century Gloucestershire and Worcestershire the custom of live-in apprentices and domestic servants going home to visit their mothers on Mothering Sunday started, checking that their families were well and taking food or money if needed. This was a time of year when food stocks were low, and the high-calorie simnel cake was useful nutrition.

Conventionally eleven marzipan balls are used to decorate the cake, with the story that the balls represent the twelve apostles, minus Judas. You will notice a gap in the marzipan balls which signifies the space of Judas.

Summer Time Treat

Summer has apparently arrived. For us it starts the week after Easter, last year we had afternoon teas on offer, delivered to your home. We will be doing likewise this year.

This is what we will be offering each Saturday, they must be pre-booked in order for me to have everything baked on time. I would like to add EVERYTHING will be handmade by us.

What’s occurring this week……. ​

Belgian Bun £1.25

We’ve already had orders for Belgian Buns, Millionaire Shortbread, Custard Slices, Fresh Cream Iced Slices and Biscoff Cheesecakes, so as usual I make full batches then we post these over bakes on Facebook on Tuesday.

In addition, ready for the weekend I will be making Banoffee Pies and

Raspberry & White Chocolate Cheesecakes. Something I wanted to try, which we tried in Devon, is a Chicken & Chorizo Pasty.

On top of all of this, I’ve started to write a cookbook with a the recipes of the sweet goodies that we bake, so, as you can imagine I’m quite excited by this.

What was new this week?

First up was the Biscoff Cheesecake. We had a lovely meal in Pizza Express, courtesy of our Tesco Clubcard points. My dessert was a Biscoff Cheesecake, I was totally uninspired by this. The portion was small but I knew that was coming as it came in a deal alongside a Salted Caramel Latte, secondly I couldn’t believe how bland it was. So, I produced our own version.

I already had in mind the next goodie, our version of a Lemon Meringue Pie. I was recently asked to supply some of our products to a local business as samples, the person who we gave them to told us her favourite item was a Lemon Meringue Pie, so I made this today. Sadly we gave over the sample but haven’t heard a word since.

Lastly this afternoon my intention was to make more Creme Egg Cupcakes. The main ingredient, mini creme eggs were out of stock, so quick thinking was needed on the spot. Not easy on a Friday morning in Tesco. We spotted Reese’s Miniature Cups, and so our cupcake was mentally put together in aisle number 9.

All gone wrong.

It’s not often my bakes go wrong but my last 2 millionaire shortbread batches have gone totally wrong. I hadn’t changed anything at all.

The caramel has been the issue, it just won’t set, it’s spilling out like larva from a volcano. The only thing I can think has changed is the condensed milk recipe.

So today, there has been no condensed milk, in fact I’ve only used 4 ingredients, sugar, butter, cream and sugar. Below is what I finished up with….
